Skinny Cheesy Zucchini Casserole

This recipe makes a great side dish for any backyard BBQ and even better is it's skinny and low carb! Win!!


SKINNY CHEESY ZUCCHINI CASSEROLE


INGREDIENTS

· 4 cups of Zucchini, diced

· 1 tsp Garlic powder

· 1 tsp salt

· ½ tsp Ground Black Pepper

· 2 Eggs, lightly beaten

· ½ cup of Light Mayo

· ½ cup of Non-fat Plain Greek Yogurt

· ¼ Panko Breadcrumbs

· 1 Tbsp Butter

· ¾ cup of shredded cheddar cheese

· ¼ tsp of Smoked Paprika


INSTRUCTIONS

1. Pre-heat oven to 350 degrees and grease a 9” x 11” baking dish.

2. In a large bowl, add in diced Zucchini, beaten eggs, Mayo, Greek Yogurt, shredded cheese, garlic, salt, pepper and mix until well combined. Add mixture to greased baking dish.

3. In a small microwave safe bowl, add in butter and melt. Add in breadcrumbs and stir. Add to the top of mixture in the baking dish and top with dusting of paprika.

4. Bake uncovered at 350 degrees for 35 minutes. I like the panko to be browned and will leave it in the oven for an extra few minutes or you can turn on the broiler. Caution* to not leave the dish unattended while broiling. It will brown quickly.

5. Cool on a wire baking rack for 5 minutes, then serve.

6. Enjoy!


Notes:

· Recipe yields approximately 12 servings.

· Can substitute 1 cup of Mayo in place of Greek Yogurt. I swap out part of the Mayo to save some calories and add protein.
