Low Carb Egg Roll in a Bowl

I love Egg Rolls. Golden, crispy fried outside with a tasty, full of flavor filling. If you're looking for a healthier option or simply trying to reduce carbs this is a great alternative. All of the taste of the Egg Roll without the guilt.

EGG ROLL IN A BOWL
INGREDIENTS
· 1 lb Ground Turkey (can sub lean ground beef, chicken or pork)
· 1 16oz package of Coleslaw Mix
· 1 Cup of Shredded Purple Cabbage
· 3 Tbsp of Liquid Aminos or Low Sodium Soy Sauce
· 1 tsp minced ginger
· ½ tsp Ground Black Pepper
· 1 tsp Kosher salt
· 1 garlic clove, minced
· 1/8th cup of Green onion, sliced thin
· 1 Tbsp of Grape Seed oil
· 1 tsp Sesame oil
· 1 tsp Sesame seeds (garnish)
· 1 tsp Red Pepper flakes (optional)
· Sriracha Sauce (garnish, optional)
INSTRUCTIONS
1. In a large skillet, heat up both Grape Seed (can sub vegetable or olive oil). Add in ground turkey, crumble and cook until no longer pink.
2. Add in Ginger and Garlic, sauté for 1-2 minutes then add in coleslaw mix and purple cabbage.
3. Add in Soy sauce and the rest of the seasonings. Stir well to combine. Cook together for 5-7 minutes.
4. Add in sliced green onion, sriracha sauce, top with sesame seeds and serve.
5. Enjoy!
Notes:
· Can add in any additional vegetables (snow peas, broccoli, additional carrots, etc.).
