Easy Sausage & Corn Chowder

It's officially here, it's Fall. I'm not a Pumpkin Spice girl but I do love a good bowl of soup. So what better way to celebrate the first day of fall than with a tasty and easy chowder!


EASY SAUSAGE & CORN CHOWDER


INGREDIENTS

· 1 1/2 Cups of Frozen corn

· 2 Cups of Diced Potatoes (I used red potatoes)

· 2 Cups of Diced Sausage (I used Smoked Turkey Sausage)

· 1 1/5 cups of Chicken Broth

· 1 Tbsp of Minced Garlic

· 1 Jalapeno (seeded & diced finely)

· ¼ tsp of Garlic Salt

· ¼ tsp of Ground Black Pepper

· ¼ tsp of Onion Powder

· 1 Cup of Milk

· 1 Tbsp Corn starch

· ½ Cup of Shredded Cheese

· Chopped Green Onions for garnish


INSTRUCTIONS

1. In a medium size crockpot, add in corn, potatoes, sausage, chicken broth, minced garlic, jalapeno, garlic salt, onion powder and black pepper. Mix to combine and set on low for 4 hours.

2. About 30 mins before the soup is ready, combine the milk and cornstarch making sure to mix well and add into the soup. Stir and let sit to thicken.

3. When the soup is ready, add in the shredded cheese, stir to combine.

4. Soup is ready to serve! Garnish with additional shredded cheese, green onions (if desired). I like to serve my soup with tortilla chips on the side.

5. Enjoy!


Notes:

· Can be made on the stove top in a medium sized pot. No need to sauté, simply add in all ingredients and set to medium/low. Stir frequently.

· Can easily sub in can corn in place of frozen.
