Skinny Fruit Muffins (1 WW Point!)


Hot Girl Summer is coming, whether we're ready or not and a girl's gotta eat. I've been on a quest to eat some tasty, satisfying and low fat or low carb foods that don't suck. Que Skinny Fruit Muffins.


This recipe is flexible in that you can use whatever fruit you'd like or have on hand. I tried both fresh Blueberries and Strawberries. The result was great! The muffins were tasty, light and still satisfied that little sweet tooth without sabotaging my diet. On WW it's 1 SmartPoint per muffin.

SKINNY FRUIT MUFFINS


INGREDIENTS

· 1 ½ cups of Kodiak Cakes Protein Pancake Power Cakes, Flapjack and Waffle Baking Mix

· 1 tsp of Baking Powder

· ½ cup Unsweetened Apple Sauce

· ½ cup Water

· ¼ cup Granulated Sugar substitute (I use Stevia)

· 1 large egg

· 1 ½ tsp of Vanilla Extract

· 1 cup of fresh fruit *see notes section


INSTRUCTIONS

1. Pre-heat oven to 350 degrees and line 12 muffin tins with cooking spray or muffin liners.

2. In a large bowl, add in Kodiak cake mix and baking powder, whisk and set aside.

3. In a medium size bowl, add the apple sauce, egg, sugar substitute, vanilla and stir. Combine with the dry ingredients in large bowl.

4. Gently stir in fruit of choice.

5. Bake at 350 degrees for 15-18 minutes. Muffins should be soft and spring back when gently pressed. A toothpick can also be inserted to check for doneness.

6. Cool on a wire baking rack. Once muffins have completely cooled, transfer to an airtight container.

7. Enjoy!


Notes:

· This recipe yields 12 regular size muffins.

· Muffins will keep for several days at room temperature in an airtight container (or less at my house!)

· I use parchment muffin liners. They are non-stick and save the added calories from cooking spray.

· I prefer to use fresh fruit (like Blueberries) versus frozen as the batter tends to take on the color of fruit in the batter.

· When using larger fruit, make sure to chop it into smaller pieces. Like Strawberries or Bananas.


WW Points:

Blue: 1 SmartPoint for 1 muffin

Green: 1 SmartPoint for 1 muffin

Purple: 1 SmartPoint for 1 muffin
